The weather is heating up, the sprinklers are coming on, and we’re in the mood to share our perfectly themed summer recipes with you before the Fourth of July holiday hits. This collection of all-time favs proves delicious and popular year over year, so we wanted to put them all in one convenient spot for you to read through. So get out there and test drive these better-for-you, plant-based, summerific recipes – we know you’ll love them.
In no particular order, here are our fan-favorite, Top 5 ‘Red, White, and Blue’ themed recipes:
Blueberry Pie Bars – This baked treat is perfect with a dollop of whipped coconut cream or some vegan vanilla ice cream. It’s the perfect combination of a berry crumble and a traditional blueberry pie; but in about half the prep time.
Granola Parfaits with Coconut Cream – Can you even stand how adorable these are? These check all the boxes; red, white, and blue, AND such a healthier version than the traditional ‘whipped topping’ ones. We think the extra special touch of adding little flags on top really brings this one to the next level.
Ricotta Chocolate Chip Ice Cream – This recipe went viral on TikTok a few months back, and our vegan version made just as big of a splash (if not bigger). We are using this as one of our “white” recipes in the “Red, White, and Blue” theme, but you could take it even a step further and instead of adding chocolate chips, mix some blueberries or strawberries (or both!) into this ice cream and get above-and-beyond patriotic. The possibilities are endless with the collection and variety of toppings you can use – but we love the sweet and salty combo here of the berries plus pistachios.
Watermelon Ice Cream – No dairy? No problem! This dreamy, 3-ingredient recipe is sure to be a hit with young kiddos and adults alike. The coconut milk creamer base gives it that little bit of added creaminess while still maintaining the fresh, summery sweetness of that delectable watermelon taste profile we all love.
