Ingredients:

  2 Tbsp. coconut oil

  1 Large yellow onion

  5 Diced tomatoes

  16 Oz. canned chickpeas, drained

  2 Tbsp. garam masala

  1 Tsp. curry powder

  14 Oz. coconut milk

  1 Lime

  Salt and pepper to taste

  Naan bread, optional


Instructions:

1. Sweat the tomatoes and onion in an oiled pan until soft, about 10 minutes.
2. Add the chickpeas, garlic, and spice powders.
3. Add the coconut milk and bring to a boil. Then, reduce heat to low and simmer for 15 minutes.
4. Taste the curry and feel free to adjust the flavor with salt and pepper. Take the curry away from the heat and squeeze the lime on top.
5. Serve with cooked rice or naan bread.

Cocktail: Vegan Dole Whip Mimosas

Ingredients:

  1 Cup pineapple juice

  1 Bottle Prosecco or Champagne

  4 Tbsp. Coconut Cloud Original Coconut Milk Creamer

  Fresh pineapple wedges

  Whipped coconut cream


Instructions

1. In a blender, blend pineapple juice, pineapple wedges, and coconut creamer until combined.
2. Serve in a flute glass and top off with Prosecco or Champagne.
3. Add a dollop of whipped cream on top.
4. Enjoy!
