8 vegan marshmallows (we love Dandies brand)
1 pint dairy free/vegan Vanilla ice cream
¾ cup unsweetened coconut milk or almond milk
2 TBS Coconut Cloud Toasted Marshmallow hot cocoa mix
*Optional ¼ cup chopped pecans (salted, and lightly toasted is best!)
- Skewer your marshmallows onto 2 heat-safe skewers and toast over an open flame (the stove top works great for this if you have a gas burner). You can also broil them for 30 seconds or so under the broiler. They should be very toasted, but not black!
- In a blender, combine the ice cream, coconut milk, and Coconut Cloud Toasted Marshmallow cocoa mix and blend until smooth. For a thicker shake, add more ice cream. For a thinner shake, add a bit more non-dairy milk.
- At the last minute, add 6 of your toasted marshmallows and nuts if using. Blend for just a few more seconds to incorporate and then pour into glasses and serve with the 2 remaining toasted marshmallows as garnish. Enjoy!
