- 2 cups frozen pineapple
- ¼ cup canned coconut milk, OR ¼ cup any plant milk plus 2 tbsp Coconut Cloud Vanilla coconut creamer powder
- Pinch of salt
- 2 tbsp sweetener of choice (we just used organic cane sugar)
- 2 ½ tsp lemon juice
Directions: Combine all ingredients in a blender or food processor and blend until smooth. Scoop out with an ice cream scoop, or transfer to a Ziploc bag with the corner cut off and pipe out for swirly soft serve look.
