Recipe: Vegan Eggnog (Dairy-Free)
Eggnog - a legendary holiday beverage where spices and creamy goodness merry in one cup! But what about us dairy-free and vegan folks? We created a signature vegan eggnog that tastes so good, it’s better than the real thing. All you need is a blender!
Using Non-Dairy Milks
Cow’s milk is touted for its nutritional qualities, but it’s not for everyone! The animal product is not part of the vegan diet for a number of personal and health-related reasons. Whether you exclude dairy from your diet for ethical or health reasons, there are many other non-dairy alternatives such as these to choose from.
- Almond Milk: Has a nutty, sweet flavor and is made from almonds and is low in calories.
- Coconut Milk: Has a creamy texture and a sweet flavor. It contains no carbs, no protein but is high in good fats.
- Oat Milk: Has a mild, sweet flavor. It’s high in protein, fiber, carbohydrates, and calories. Helps lower cholesterol and blood sugar. It’s easy to make your own!
- Rice Milk: Low in fat and protein but loaded with carbs. Also easy to make your own!
- Cashew Milk: It’s rich and creamy with a sweet, subtle nutty flavor. It’s low in calories, carbs and sugar.
- Hemp Milk: Has a thinner texture than other milk substitutes but has a sweet, nutty flavor. It’s easy to make your own using water and hemp hearts. It is a good source of protein and fatty acids. It’s a low-carb, low-calorie alternative that’s loaded with beneficial nutrients.
Vegan Eggnog Recipe
Ingredients:
- 2 cups homemade cashew milk or other non-dairy milk of your choice
- ½ cup warm water mixed with 3 TBS Coconut Cloud Vanilla coconut milk creamer powder
- ⅓ cup raw cashews, soaked overnight or for at least 30 minutes (optional)
- 4-6 Medjool dates
- 1 teaspoon vanilla extract
- 1 teaspoon freshly ground nutmeg
- pinch of ground cinnamon
- pinch of ground cloves
- pinch of sea salt
Directions:
- Add all of the ingredients to your high-speed blender and process until smooth and creamy. Serve immediately or add spiced rum, bourbon, brandy or whiskey, for a spirited version.
Optional: Add some vegan whipped cream and a pinch of freshly ground nutmeg on top!
