Matcha White Chocolate Peanut Butter Cups (Vegan)

Lately on the blog and our Instagram, we've been talking a bunch about ingredients like matcha and turmeric. That's because warmer weather is here, and usually when that happens, we like to fuel our bodies with the right things that'll get us moving and outside. We explained the benefits of matcha here on the Coconut Cloud blog and went into the details about how the fine green powder can give you a sustained, natural boost throughout your sun-filled day.

Of course, if you're a matcha purist, then you can get your daily fix of matcha with a coconut milk matcha latte. But matcha goes in a bunch of recipes that aren't just drinks. If you like to play with your food like we do, then check out a recent favorite recipe of ours that comes from Kat of 86 Eats.

Matcha White Chocolate Peanut Butter Cups

We found Kat and her blog when perusing other vegan recipes online. She's got creative vegan recipes and awesome photography to go along with it. Most importantly, she's dedicated 86 Eats to exploring the benefits and deliciousness of a plant-based diet. We love the fact that Kat loves to eat, and like us, isn't willing to sacrifice the goodness of food when giving up non-vegan fixes like meat and dairy.

She experimented with our vegan matcha latte mix to produce these Matcha White Chocolate Peanut Butter Cups. Of course, these peanut butter cups feature matcha and coconut from our Coconut Cloud matcha latte. The coconut cream lends to a beautifully rich, creamy texture that beats almond milk and soy milk in terms of fat content; don't worry, the fats in coconut milk are healthy fats!

These peanut butter cups also packed with the nutritional benefits of coconut oil and peanut butter. Try to use all-natural peanut butter (only the good stuff!) if you can!
