Coconut Matcha Energy Bites (Vegan)
Well, it's officially spring, which is why we're ditching hibernation mode and welcoming warmer weather with clean, detoxifying ingredients. We recently talked about the benefits of matcha here on the Coconut Cloud blog and went into the details of why we love the fine green powder.
You can obviously drink matcha in its original form (as a shot of matcha powder mixed with hot water) or cut the tea's grassiness with milk. Being dairy-free, we prefer a matcha latte with coconut milk. But did you know that you can incorporate matcha in other recipes, too?
Coconut Matcha Energy Bites with Chia
We recently had the opportunity to partner with Mackenzie Burgess of Cheerful Choices, a blog dedicated to sustainable food and nutrition. We love the fact that Mackenzie is Colorado-based like us, and better yet, she's extremely knowledgable in nutrition and food science.
She experimented with our vegan matcha latte mix to produce these Coconut Matcha Energy Bites. Of course, these energy bites feature powerful matcha and fat-rich (the good kind!) coconut cream from our Coconut Cloud matcha latte, but they're also packed with the nutritional benefits of chia, shredded coconut, rolled oats, and nut butter.
These coconut matcha energy bites are no-bake and super easy to make. Here are the ingredients you need:
- Rolled oats
- Shredded coconut, unsweetened
- Chia seeds
- Matcha Green Tea Latte Mix
- Nut or seed butter of choice peanut butter, almond butter sun butter, etc.
- Almond milk or water
- Maple syrup
