No Bake Coconut Snowball Cookies (Vegan, Gluten Free)

Ingredients:

 1 ½ cups unsweetened desiccated coconut, OR, 1 ½ cups shredded sweetened coconut (depending on how sweet you like it)

½ cup almond flour

3 TBSP maple syrup

2-3 TBSP hot water

1 tsp Coconut Cloud Vanilla or Original creamer

1 tsp coconut oil

2 tsp pure coconut extract

*Powdered sugar for rolling and/or extra shredded coconut

 

Directions:

In a food processor, combine all the ingredients and process on High for 1-2 minutes until a sticky dough forms. If it’s too dry, add an extra tablespoon of water and process again until the desired consistency is achieved.

Using a small cookie scoop or a tablespoon, scoop out balls of the dough and roll in your hands until they are smooth and round. Place on the parchment paper. Repeat until you have 16 balls. Roll the balls in your powdered sugar or extra desiccated or shredded coconut, and pop in the fridge to set up. They can be eaten right away or stored in the fridge for a few days. Enjoy!
