- 1 cup almonds
- ½ cup cashews
- 1 TBSP chia seeds
- ¼ cup dried blueberries
- ½ cup dried apricots
- 8 Medjool dates, pitted
- ½ oats (you can us GF if you want!)
- 1 tsp Coconut Cloud coconut milk creamer mixed with 1.5 TBSP warm water
- 2 TBS coconut flakes
- *extra coconut flakes to roll the balls in when they are finished
Place all ingredients into a high speed blender or food processor and pulse until everything is well combined and not super chunky. The mixture should be sticky (like cookie dough!) so you can roll it into a little balls.
Form the mixture into 18-20 energy balls. Put some coconut flakes on a plate and roll the energy bites in them. The energy balls can be stored in an air-tight container in the fridge for up to a week. Enjoy!
