Copycat Starbucks Cranberry Bliss Bars (Vegan, GF)

Ingredients:

  • 3 cups almond flour
  • ¾ tsp powdered/ground ginger
  • ½ tsp salt
  • ½ tsp baking soda
  • 3 TBSP water
  • Zest of one orange
  • 2 tsp pure vanilla extract
  • ½ cup pure maple syrup
  • ½ cup dried cranberries
  • ½ cup mini white chocolate chips
  • Vegan cream cheese frosting *you can make this yourself (recipe here), or buy your favorite DF/vegan frosting from the store (like Miss Jones)

 

Directions:

  • Preheat oven to 350 F. Line an 8 inch pan with parchment paper and set aside.
  • Stir dry ingredients together, then add all the remaining ingredients (except for the frosting) so that a dough forms. Cranberries can be mixed into the dough or sprinkled on top (or a little of both!).
  • Transfer the dough to your prepared pan, and use a second sheet of parchment to press it evenly down into the bottom of the pan. Bake for 12 minutes. Let cool completely before frosting.
  • Frost and decorate with extra cranberries, a little orange zest if you’d like, and dairy free white chocolate chips!
