Coconut Turmeric Chocolate Chip Muffins (Dairy Free)

There are many ways to incorporate turmeric into your diet, and these Coconut Turmeric Chocolate Chip Muffins are one of them! Made by Vivacity Buzz, this recipe includes our Turmeric Ginger mix, sweet potato, and banana - fueling your body with the power of plants. Add in some dark chocolate and you can't go wrong!

 Why Turmeric?

There’s a reason we’re seeing turmeric pop up in so many recipes. For one, it’s what gives ice creams, smoothies, and lattes that beautiful tawny color. It’s also a plant-based source of anti-inflammatory and antioxidant properties. It’s believed to be so effective, it’s often taken in pill form. There is also the powder form that makes it easy to reap the benefits by adding to smoothies, lattes, and even these chocolate chip muffins. 

What is Turmeric?

Turmeric is a spice and a member of the ginger family. It’s often found in India where it is used for a variety of benefits. It’s used in their cuisine but it’s also used in Ayurvedic medicine and in many healing traditions. It can be applied to wounds to help fight infection. It’s also mixed with milk to help calm the mind. Indian culture also believes when it is made into a paste and applied to the entrance of a new home it brings prosperity. But it’s really the medicinal qualities that makes it a great addition to these coconut turmeric chocolate chip muffins.

Possible Health Benefits of Turmeric

Turmeric is thought to help a wide variety of conditions including depression, high cholesterol, gingivitis, hay fever, PMS, and even helps with hangovers. In Ayurvedic medicine, it is believed to have antiviral, antiparasitic, and antibacterial properties. Ayurvedic practitioners use it to treat diabetes, rheumatism, pain, memory, skin conditions, and osteoarthritis.

Ingredients:

  • 1 cup of mashed sweet potato (I used riced sweet potatoes from the freezer section to make it quick and easy)
  • 1 small ripe banana
  • 4 large eggs
  • 1/3 c tahini butter
  • 1 tsp vanilla extract
  • 1/2 c coconut flour, sifted
  • 1 tsp baking powder
  • 2 T coconut clouds ginger turmeric golden milk latte
  • 1/2 tsp sea salt
  • 1/2 c dark chocolate chips

Directions:

  1. Preheat oven to 325 degrees.
  2. Mix the wet ingredients together in a blender or with a hand mixer. 
  3. Add in dry ingredients and mix until batter forms. 
  4. Stir in chocolate chips. 
  5. Bake for 15-18 minutes. 
  6. ENJOY!
