Coconut Lime Popsicles (dairy free, vegan, GF)

  • 14 ounces full-fat canned coconut milk
  • 1 teaspoon lime zest (about 1 lime)
  • 3 tablespoons lime juice , freshly squeezed
  • 1/3 cup maple syrup, or use agave nectar if you’d like
  • ¼ teaspoon salt (optional)
  • *Add in ideas: flaked coconut and/or vanilla extract

Equipment: Popsicle mold


Place all the ingredients in a blender and blend for about 10 seconds until just smooth. If you want larer flecks of lime zest in the popsicles, add the zest part way through the blending process and then just pulse 1-2 times.

Pour the mixture into a 6-popsicle mold, leaving about ¼ inch of room at the top. Place in the freezer for 5-6 hours.
