Coconut Cloud Mojito Mocktail

Ingredients:
- 3-4 TBSP Coconut Cloud Original creamer powder (1-2 stick packs work perfectly!)
- ½ cup hot water
- 1 Lime, *optional, reserve some lime zest for your salt rim
- 4 Ounces Ginger Beer
- 4 Ounces Sparkling Seltzer or Sparkling Water
- 10-12 Mint Leaves
- Sea Salt for rimming the glass
Directions:
- Start by preparing your Coconut Cloud creamer mixture; whisk together the ½ cup of hot water and your Coconut Cloud Original creamer powder until fully dissolved and combined and set aside to come to room temperature for several minutes. You’ve just made liquid coconut milk!
- Then, pour your sea salt into a small dish. Stir in a bit of the lime zest if you’d like. (This makes it look very fresh and pretty!).
- Then, cut your lime into slices, and rub one of the slices along the rim of a tall glass, so that the lime juice coats it.
- Place the glass rim-down into the sea salt/lime zest mixture, and rotate until the sea salt sticks to the rim of the glass. Set aside, then repeat with your second glass.
- Once the rims of both glasses are coated in the sea salt, divide your mint leaves between the two glasses.
- Next, add all of your mocktail ingredients to a blender and blend until smooth!
- Finally, divide your mocktail between two glasses, serve immediately, and enjoy!
