Chocolate Chip Baked Oatmeal (Vegan, GF)

  • 1/2 cup gluten free rolled oats
  • 1/2 of a banana
  • 1/4 cup hot water mixed with 2.5 TBSP Coconut Cloud Vanilla creamer 
  • 2 TBSP almond butter
  • 1 TBSP pure maple syrup
  • 1/2 tsp baking powder
  • 1/4 tsp vanilla extract
  • Pinch of sea salt
  • 1/4 cup vegan dark chocolate chips

For topping

  • drizzle of almond butter 


Add the oats, banana, Coconut Cloud creamer mixture, almond butter, syrup, baking powder, extract, and salt to a blender (the Ninja bullet works great!). Blend on high until smooth and creamy.


Fold in the chocolate chips.


Spray two ramekins with cooking spray. Pour the contents of the blender into the ramekins. Top with a few extra chocolate chips if desired.


Place both ramekins in the microwave. Cook on high for 2 - 3 minutes (cooking time may vary depending on the wattage of your microwave, so start with less time and work your way up). Remove, let cool slightly and top with almond butter drizzle.
